I am looking for help for a buddy at work. He is having a big group over for dinner on Christmas Eve, and now has to work. He won’t be home until maybe 5 that evening, and has ordered a Prime Rib. In addition to that he ordered a 2nd one to cook for another guy at work. The Prime rib roasts are about 14 Pounds each. He realizes he's in a pickle and asked if it was possible to smoke the roasts on the 23rd, and then he can just reheat them to serve on Christmas Eve? He asked me what temp he might want to cook them too on the smoker.... then what the best method to reheat would be? Most people have just told him to forget about it...I told him I would ask here. So if you have a suggestion please offer it up. Thanks.
