[p]Chocolate Cherry Nut Bread[p]1/2 cup (l stick) butter softened
1 cup white sugar
1 cup buttermilk
2 eggs
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup powdered cocoa
1 cup dried tart cherries-5oz. (sweetened cherries- rinse with water)
1/2 cup mini semisweet chocolate morsels
1/2 cup chopped pecans[p]Mix butter and sugar then add buttermilk, eggs and vanilla extract, beat well. Combine flour, baking powder, baking soda, powdered cocoa and add to buttermilk mixture, stir, add cherries, chocolate morsels and pecans, stir until smooth and everything is wet.[p]Grease bottom only of large loaf pan, pour batter into it and bake in a preheated 350 degree oven one hour. (egg: indirect setup, dome 375-400, platesetter feet up, loaf pan on grid, bake one hour or until a stick inserted comes out clean)[p]Note; Impressive chocolate flavor, tart cherries balance the sweet. [p]Tis' the season for something like this- would make a nice gift.
