I've got a 3.5# sirloin steak that's about 2.5+ inches thick. I like my steak rare but the rest like it no more than medium-rare. Does 5 minutes a side at 650+ then dwell for 5 minutes sound about right? I figure I'll get the center of the beast and the others will get the outer parts.

JimW,[p]I'd suggest no dwell time. You offer questions on a 15 minute cook. Sear at 650F for 7.5 minutes each side and remove. Dwell time only cooks the meat to a doneness beyond what the intial sears times should have completed. [p]Spin
