<p />Cooked a 13.4 lb bird ala Mad Max with fatastic results. Since the bird was small, I didn't brine it. I used Cooks Illustrated Herbed Turkey as a guide for the Herb Paste. Used one stick of butter, 1 cup of parsley, 1 shallot, 1 tsp Dijon Mustard, 2 tsp sage and 4 tsp thyme. Blended with mini food processor. Stuffed bird with lemon, carrot, onion, apple and same herbs as were in the butter. Added 2 cups turkey stock to the drip pan after the wine reduced a little. Put it on at 1:20 and pulled around 5PM. Grid temp was 310 to 330 while dome was 330 to 360. Great gravy and meat. Thank you everyone!
