Thought I'd give this a try and see for myself if the breast would be done at the same time as the thigh. I cooked at 325 dome untill the breast hit 165. The reading of the inner thigh was 172 at that time so I took the turkey off the egg. We agreed that it was the juiciest breast off the egg yet. In conclusion, upside down turkey is easy to cook, very juicy, unusual in appearance and presentation and needs nothing more than a V rack and drip pan.
