Just did the best ever chicken on the Small with the help of the Grate Mates. Temp at 330 to 350, short grate mates in place, no peaking for one hour and unbelievable results. Thanks Evans and thanks Whiz for the web site. Learning a lot with still a lot to learn. Love the Small Egg, perfect for two, lump lasts a looong time and you can make steel on the thing if you can stand the heat!!
