Tilapia is a freshwater fish, with a fairly muddy taste. I would think adding some smoke flavor would be good.

Nature Boy,[p]Get that skin off and most of the muddy taste will be gone....well sometimes. This goes for most freshwater fish.[p]Fried is they way we eat it.[p]Z
