Juniper salmon

[p]I tried a new (for me) rub on a 2 lb. salmon fillet tonight: 2 T juniper berries, put through a spice grinder; 2 T kosher salt; 4 T brown sugar; 1 tsp fresh-ground black pepper. Sprinkled generously on the flesh side, wrapped & refrigerated for 5 hours. The recipe - from Joyce Goldstein's book 'Back to Square One' - says to marinate from 4 up to 12 hours.[p]This originated with the Indians in the Pacific Northwest, who nailed the fish to a board & smoked it. Joyce suggests grilling or broiling, a thoughtful gesture for unfortunates without a BGE. ;-} I smoked it with some alder chips for about an hour at 220. [p]This one's a keeper. Juniper & salmon are wonderful together.

    My wife of 33 - soon to be 34 years - loves your rib recipe and I ordered MANY - God only knows how MANY Juniper berries in that bag from Penkzies..."12 berries this time and 12 berries next time" I probably ordered enough for a lifetime times four! RRP
