BBQ Guru Question

I'm thinking about getting a BBQ Guru. I read about it and understand how to use it for low n slow, but am wondering about things like TRexing a steak. Do you remove the blower to do that? I know the probes can't handle the temp that high. If you can't use it for that, wouldn't it reduce the air flow needed for a temp that high.
