Whole turkey thigh and breast temp when done?
Crab leg
Posts: 291
I just threw a 10lb turkey on and was wondering what temp to shoot for in the thigh and breast. It is at 325* on an upright turkey holder with some white wine and rosemary in a can in a very light duty drip pan(sort of makes it indirect, but not really) Thanks for any help.

Crab leg,[p]shoot for 160 breast and 180 thigh.[p]I did a 16 lb turkey on a vertical once and the breast was done a lot quicker than the thigh. Once the breast hit 160 i pulled it, removed the breast meat and put the remaining carcass back on the egg till done. It really turned out to be a mess. Hope you have better luck. It should turn out fine, but may not be a presentation bird.[p]Scott
