Chicken Marinade?

I would like a marinade for chicken. I have used several different ones, including the best, Mrs. Dogs jerk. I would like to hear of what the forum likes to use. Have a Happy 4th of July![p]Mark

    BlueSteel,[p]Tonight I had what I shall now call "Lack of Common Sense Chicken Breasts." These were heavily marinaded in a mix of Mrs Dog's Jerk and Extra Virgin Olive Oil. I used an amount that far exceeded the recommended dosage. To this I added several (too many?) drops of Mrs Dog's Habanero sauce. I added this to two breasts that were lightly kosher salted, then completely covered in black pepper then completely covered with cayenne. Supposedly the longer you marinade the hotter it gets. These puppies (no pun intended on Mrs Dogs) went for 3 full days.[p]Now Cornfed likes his chicken spicey, and these things were GLOWING! After just two bites I was crying out for bleu cheese! I ate 'em both and enjoyed every last bite, but I'd have to caution that these are not for the faint of heart. The spice stayed with me for a good 20 minutes after I was done eating and drinking about 3 large mugs of water.[p]Lack of Common Sense Chicken - for that person who enjoys the endorphin rush associated with firey foods a little TOO much!

    Cornfed,[p]Your post reminds me of the post linked below by Frozen Chosen. Every time I make jerk anything, I think about this when I open the jar of seasoning. I think his analogy was "Wasps in my mouth..." I know this was not funny at the time to him and maybe not now, but this is a classic post.[p]

    Zip,[p]Nice post and some nice followups. I like Brant's comments about milk working better than beer. That makes sense and I understand the reasoning why, but common - you just gotta grab a beer when the mouth's on fire! As for the thing about the longer the hotter, the relationship seems to be nonlinear. Marinade for a day and you'll find x hotness. 2 days will be something like 4x. 3 days seems to me to be something like 20x heat![p]Awesome meal. And good for the Colonel's mother in law, too :)[p]Cornfed

    Now that is funny!! Thanks very much for posting that. It was before my time and have never seen it. Burning that midnight oil tonight trying to get 200 hours of work done in a week or two..hahh! Sure makes it easier to work when you are laughing your butt off!! [p]A whole bottle of jerk would definitely exceed that recommended dosage! Just think if he marinated it 30 hours like Cornfire did.[p]NB

    Me again. Was just workin and thinkin about your question. One of my favorite marinades is Tanker Tim's Okinawan Hot Wings. Can be as spicy or mild as you want, and works great on all chicken pieces.[p]I toast the sesame seeds before marinating. Yum.[p]NB

    Cornfed,[p]Thanx for the inspiration. I also enjoy a little "bite" in my chicken and I just happen to have all the ingredients you mentioned. This will be one of my weekend entrees.[p]Isn't it fun serving something like this to a capsacin lightweight guest or partygoer who told you that after having Durkees Red Hot on some wings, they can now handle anything. hehehe I always keep plain yogurt on hand for when they get in over their heads.[p]K~G

    You're killing me here. As far as those Habaneros - they should have a trigger lock on them - not guns! Whew, they are all powerful. Startrek should have used them to power everything rather than those crystals.[p]Tim [p]
