meatpie crusts?

<p />my butcher was experimenting with a new sausage recipe and let me have some.it was a greek sausage with lots of red pepper and leeks, dont know what else, but was eally good. experimented with some meatpies with it. mycrust recipe is pretty good for a sitdown pie on a plate type deal. 3 cups flour, 1 stick butter, equal amount of lard, egg yolk, and a half cup milk. it comes out nice and flakey. what i need though is a pie crust recipe not so flakey that i can pick up a whole pie and walk out the door eating it. any one have a recipe that has a more rugged crust that will hold together better for the road.

    Nice work- beautiful golden crust. I'm thinking pastie crust. Basicly it's flour, fat(butter or lard), a little salt and cold water.

    i can try that,im assuming that i keep the fat to flour ratio the same, add maybe a teaspoon of salt, and add ice water until the dough sets up.i dont have a cupcake pan but am thinking that the shape of the pie would also help keep it together. this was awefully easy to make, thinking of trying some homemade kielbasa with onions and maybe some ground pork with ground tomatoes as a filling. i want nice small breakfast pies

    i dont know if you have ever eaten at thwaites market in methuen for breakfast, but they make the best meat pies, served hot at the counter. trying my best to duplicate them

    <p />They're great for making individual meat pies. Just press the biscuits out, place some filling in the middle and fold in half. Press the sides together with a fork.

    These crust recipes are from The Farmhouse Kitchen by Mary Norwak. I purchased this book from Hatchards Bookstore on Piccadilly in London England. These people know pie crusts.
    Crust recipes only here:
    Hand Raised pork pie
    12 oz. self riising flour
    1/2 tea. salt
    4 oz lard
    1/4 pint water
    1 egg
    Sieve the flour and salt into a bowl. Boil the lard and water togetherin a pan. when dissolved pour into the center of the flourwhile hot. Work all together until smooth. Cut off a 3rd for the lid.[p]Shortcrust pastry
    4 oz plain flour
    2 0z lard
    pinch of salt
    water to mix a firm dough[p]Chicken and Egg Pie:
    10 oz plain flour
    1/4 tea. salt
    2 1/2 oz butter
    2 1/2 oz lard
    3-4 Tables. water
    1 egg beaten for glazing

    thanks for the info, one of those has to be close to what im looking for. a good english pork pie for breakfast and im good til dinner.there is an english market/butcher shop near me that makes great pies for breakfast, traditional pork has been his staple, but he has branched out into chicken, keilbasa, beef terriyaki, hamburg and onion, and makes a killer chili pie. they are pretty simple to make and the egg just makes them better
