Help. It's hotter than *** here in Kentucky and I'm trying Dr. BBQ's shortcut brisket. I've got the lower vent only less than 1/8 of an inch, and the daisy wheel closed with the slider vents only open a tad. Can't get the heat below 300. Thanks for any suggestions.
