Butt progress...I know you're all waiting with baited breath, but I have to ask for your input once again. Temp was remarkably stable throughout the night and was at 225 when I left for church at 10:45. When I returned home at 1:00, however, the dome temp registered 150 with my meat temp of 145! I quickly shot open the bottom vent and lifted Ms. Daisy, but after 10 minutes, there was no temp bump, and I had to remove the main guest from his enviable position in the egg and relight. Shall I continue to strive for a constant 225 in the dome or do you think it's safe to elevate it a bit to 300 since we plan on dinner at 7:00. Total cook time so far is 17 hours.
