I spent most of my money on good bourbon, and bad women...the rest, I just wasted!! -
Tony,[p]Here's what I use. It's been a hit when ever I make it.[p]This is a Vinegar based sauce for Pulled Pork.[p]Ingredients:
• 1 Cup cider vinegar
• 2 Tbs Sea Salt
• 1 Tbs Turbinado Sugar
• ½ tsp Ground Chipotle - McCormicks
• 4 Dried Cayenne peppers, split & stemmed[p]Preparation Directions:
• Mix all ingredients together. Let stand as long as possible, at least ½ a day, but the longer the better. It's best used in plastic "Ketchup Style" squirt bottle you can pickup at the grocery store for about a buck. [p]Cheers,[p]GrillMeister

Salmon,[p]I love it that you live in the center of sweet thick and tomatoey sauce land and you promote the hot thin and tart vinegary sauce.... seems you can't take North Carolina out of the boy. :~)[p]I agree, Scott's IS the shiznit on smoked chopped shoulder of pork.[p]John[p]

<p />WooDoggies,[p]Well, I really like it. Additionally I some times use Blue's Hog Tennessee Red or make some of Chez John's Piedmont Sauce.[p]Fat Johnny's Bastardized Piedmont Sauce [p]1 quart cider vinegar

12 oz bottle Sweet Baby Ray's BBQ Sauce
1/3 cup packed brown sugar
2 T red pepper flakes
2 T salt
1 tsp. black pepper
1 tsp. celery seed
2 T Worcestershire sauce
Juice of one lemon
1 T chipotle powder
1 tsp. dry mustard
1 T onion powder[p]Bring to the boil, then simmer for 10-15 minutes. Let cool, and bottle. Great with Carolina style pulled pork BBQ sands.[p]Rick[p]

Salmon,
Here is my sauce. Like the one above it uses a store sauce as a base. Mine makes a lot though.[p]Roy’s Toxic Sauce[p]1 gal vinegar
1qt. Carolina Treet Sauce
4 TBS. Black Pepper (uncrushed)
4 TBS. Red Pepper (uncrushed)
1 cup Brown Sugar
1 cup Salt
1 TBS Sage[p]Adjust red and black pepper to taste, add cayenne pepper to taste.[p]Bring vinegar almost to boil, add ingredients one at a time and stir slowly allowing to simmer 30 minutes after all of the ingredients are added. Store and allow to set 72 hours.[p]
