halibut

A friend just came back from Alaska where she and her husband caught a halibut. She is planning to bring some over when it gets here ( I am not sure how the fish is traveling but it wasn't in her luggage). There will also be some salmon. Any suggestions for its introduction to the Egg?

    Halibut is mild, and the larger fish they catch up there can have thick fillets. I'd try a pie tin with a little water and lemon juice, maybe a few slices of lemon & tomato on top. Bit of salt and pepper. Apple or other fruitwood-just enough for a mild smoke.
