The scallops were cooked in the Finex; I should have thought to take a pic of them during the cook. 

A fellow Egger, @paqman, recommended de Buyer years back and they are now a go-to. We have only cast iron and carbon steel.

My Mom used to make a wonderful strawberry/rhubarb cobbler, that we were served warm with vanilla ice cream, back on the farm.  I'm damn near in tears right now...
