Who else loves Over The Top Chili and What is your favorite meat mix?

Greetings all,
Once I tried the Over The Top method for chili, I don't think I will ever go back.

I normally use beef, but sometimes use a ground beef and pork combination. I am also experimenting with smoking different peppers too.
What is your go-to blend for the meat and your tips to enhance the chili?

Yeah, that is the best method. I also use beef ... but it needs to have fat in it (not lean) ... so it renders into the chili. If I'm thinking out of the box ... for italian meatballs, my mom actually uses veal ... much nicer tasting ... wonder if it would work for chili?Napoleon Prestige Pro 665, XL BGE, Lots of time for BBQ!

Veal sound great and I make a stew with a veal chop base, but ground veal may be too lean for chili - only one way to find out...
I need to get a grinder attachment to my Kitchen Aid mixer to make my own blends: add trimmed scraps and maybe some short rib!
