Chicken Swords gone WRONG!

I was hoping to put our touch on the post with the chicken swords, but suddenly lacking ALL the equipment to do it justice, I was forced to pivot on the fly and make them in … a chicken TOWER….
So - to avoid a TC, here ya go…

All pics out of order, as usual. The dish was a lot of work for the outcome, frankly. Skewers are definitely the way to go. But! Bacon and guadelote (I forget the cheese that goes in street corn, so that’s what we call it) were the winning finishing touch. Rockwood lump and pecan wood chunks. 

Thanks for checking it out! I think we ate an entire stick of butter lol….

I’ve got one, but we were ready to eat and the rotisserie fits the large, not the minimax.
