Roasted Spatchcocked Chicken and Potatoes

This is a fantastic dish I scooped from one of my wife's Italian cook books. Serves about 6. What really made it was coating the chicken with a paste of garlic, lemon, butter and anchovy paste. Roasted on the Egg at 400 with potatoes and onions.
