2026 SLEET BRISKET! :p

Greetings friends!

Glad to be safe and warm here in Greensboro. 

When I bought this 21 pound prime brisket from Costco,we were forecasted for 36” of snow. That ended up being a day and a half of solid sleet. Bad for roads - great for power lines. 

But I wanted to show the locals how NO WEATHER can stop the BGE from a normal cook!

So - we’re expecting about another half inch of sleet here before the event moves past (then very cold for a few days). Time to throw this monster in. 

Standard yellow mustard, CGBP, and garlic salt. 

Mix of oak, mesquite, and hickory chunks. 

Rockwood lump. 

And I use a raised water bath with granulated garlic sprinkled in. Aromatic humidity!!

225°, though I’m telling my people here this low and slow will start at 21° and finish at 10°, tomorrow.
