Blackberry BBQ Pork belly burnt ends

I tried to post this earlier and it had to go through an “approval”?

I’ll try it again 

Starting with a 9 lb pork belly



Set the smoker to 275 degrees and let it roll to an internal temperature of 205.

While she’s getting happy, stir up a batch of Blackberry BBQ sauce



States chicken, but it works excellent for this application. I use the Kinders brand of BBQ sauce for the hickory and Mrs Griffins original for the vinegar base sauce. The star of the show is the SEEDLESS blackberry preserves.

Once the belly is at temperature, remove and place fat side up for a half hour. If you have a small fan around, place and let the air move over the skin side to help remove moisture. I also take a paper towel with a little white vinegar to blot the skin and assist with the drying process.

While the belly is pulling back a bit, get your griddle “ pretty freaking hot”. 

After the half hour, it should be solid enough to cube up int 3/4 inch squares. Throw those into a half pan and make your way to the griddle. Place a few skin side down on the griddle top after applying a thin coat of oil. If you have a press, press LIGHTLY to get and even crisp on the skin.

When all cubes have been through that assembly line, take ‘em Inside and drizzle the bbq sauce over the top and finish with a few granules of coarse kosher salt.

    Appreciated, I will do my best to snap a picture of the finished product..but last year the gents were eating them two at a time off the cooker..the wives were a bit angry..
