Costco Hatch Marinaded Pork Butt - or - Can the MiniMax Do A Butt Right?

My first true MiniMax low and slow, inspired by SOMEONE around here saying you could use it to do a butt.

Filled a kickash basket to the top with Rockwood and some hickory chunks. Then - enter the WOO.
Gapped drip tray with vinegar water.

Rode just below 300°
… and the meat? A $20 bag of pre-marinated Costco hatch chili deboned pork butt. I’m always suspicious of premarinated pork ANYTHING. I think they get “hammy.”
Smoked without peeking for around 9 hours. Went native on vent settings, confirmed with the Thermoworks Smoke grate and meat probe. I love that tool for simple and local cooking. Super reliable.

Gotta say - I’m IMPRESSED the MM still has charcoal in it. Every time I use this thing I fall more in love with it…

I've cooked this in the MMX before, a half butt. I did wrap at the stall, I think it took 12 hours in total. I also didn't need to replenish the charcoal. The MMX is an amazing powerhouse, nice cook, I hope it tastes as good as it looks.-----------------------------------------------------------------------

Great way to check out the MM. I find the meat has more smoke flavor the day following the cook. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
