Beef Boneless Short Ribs

Ran across a recipe on YouTube for grilling Boneless Short ribs.  Coincidentally, while at the grocery I saw that they had some in the case.  I picked up two packages ~$7 for 3-4 ribs.

I set up the BGE for direct and made a nice fire a bit by over 400F.  The ribs were seasoned with kosher salt and black pepper and allowed to sit for an hour or so as the Egg got ready.

Once on the grill they were turned frequently gaining a nice color and once the internal was 130F, they were pulled and covered with foil.  Sliced thin, they were tender and full of great beef flavor.  I may marinate them next time for something different. But the few that were left will go on a salad or be a taco shortly.

For a normally low and slow cut these were excellent and everyone enjoyed them.
