Plate/Short Rib - First Time Cook

Found a local cattleman/butcher in my area and finally got some plate/short ribs. 4 rib just over 5lbs. Just salt/pepper/garlic salt/cayenne on for about 4 hours now floating between 250-275.  Sprayed with apple juice at 3 hour mark and once an hour until done. I'll post final results.
