Recipes for leftovers….

I've made empanadas, meat pies, bao type of things with leftover proteins. Pizza/flatbread kind of stuff is also good, and easy to plus up with all kinds of things. Many folks make eggrolls. Brisket pasta sauce is delicious! Clean-out-the-fridge frittata, or quiche, is a win.

Bean or lentil soup with tenderloin or loin. Pulled pork Mac and cheese. My niece made some great baked beans with shredded brisket. I have used leftover pork instead of chicken in chili verde.

Consider @Botch’s suggestion of nachos seconded. We obviously do things like brisket or pulled pork nachos, but we recently had some leftover pork loin and it was perfect. Was really nice using a leaner cut for this purpose.
