Burmese-ish Shrimp Chaaza

Burmese food has been tucked away in a back corner of my brain for some time, then suddenly an Andy Cooks short popped into my feed. Tried to look up some other recipes, but didn't have much luck. Not sure how authentic this is, but it was farkin' tasty. 

Its a bit different from the usual South, or Southeast, Asian "curry", so thought I would give it a whirl. It was REALLY good. The toasted chickpea flour was new, but very delicious. 

Made shrimp oil/aioli with the tails, plus star anise, bay leaves, tomato paste, paprika. Bean sprout noods. 

MIL liked it, so bonus points :smiley:

    Always a banquet and expanding your prowess.  Magazine quality photo right there.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Miles better for sure. I guess they rinse it off or something.

     Another recipe I looked at - https://www.foodandwine.com/chaaza-burmese-curry-8776599

    I liked Andy's recipe more, because of the lemongrass, and paprika. Used about 50g of toasted chickpea flour, and the curry was quite thick, so I added more water than the recipe calls for. Also, "brined" the shrimp - kosher salt, rest a few minutes, rinse (do this twice), then added to the curry at the end. 

    The bean thread noodles were new to me, but we really liked them.

    @caliking sweary adults too. Clearly my bad jokes are too bad to be recognized as jokes. Thanks for the recipes and tips on prep. I often use microgreens when I want some color but not an overwhelming flavor. Looking forward to making this!

    That looks amazing!  Thank you for sharing …. daughter dislikes cilantro, say it tastes like soup. I love cilantro.  I think her mom is responsible for the variant of the OR6A2 gene which encodes the olfactory receptor 6A2, which is part of a cluster of genes that control your perception of cilantro.

    Don't tell your problems to people.  80% of people don't care and 20% are glad you have them.

    Yes. Generously sprinkle kosher salt all over the shrimp. Rest for a couple of minutes, then rinse. Do it once more. 

    I tried this for another cook recently, and wasn't sure if it made a difference. This was the second try of this brining method, and I think it does make a difference.
