A couple snow Birds

Learning to brine chicken last year has just blown my mind on what smoked poultry can be. 

Also, I’ve never been disappointed in anything Kinders makes. Did an overnight brine on these two birds, spatchcock’d and on the egg with pecan wood at 355, that’s where she landed. 

Also was snowing the whole day. Pretty flurries. Nothing stuck but supposed to be extremely cold this week. 

This chicken was amazing.

    Beautiful yard birds! I was getting ready to post something about brining, but it looks like you are hooked on that Kinder's product complete with the handy-dandy bag right on down to the twisty tie!

    Ah heck I'll share a terrific homemade brine solution anyway that an egger known as ClayQ shared years ago. It became my go to method and we loved it. BTW it works GREAT for chicken or pork. That in Italics are my notes.

    1 QT cold water
    4 T canning salt
    4 T white sugar
    Brine for 75 minutes (though I've even gone overnight with great success)
    RINSE

    In case you aren't familiar with it canning salt is ground super fine almost like powder and that is why it dissolves so well and so quickly and penetrates the meat easily taking the sugar right along with it into the very cells of the meat!

    Thank you sir! I will try that soon for sure. Sometimes I just boil some salt to change the osmolarity of water and brine quick things, like my chicken wings for tonight.

    beautiful color on those birds. Smoked chix is probably my fav 'cued protein, especially wood smoked chix.
