Egret's Ham

It's that time of year to start giving egret's hams as gifts to family and friends. I usually cook about 20 of these during the holidays. There are a lot of eggheads on this forum who swear by this recipe........Give it a try some time.

Recipe:

Maple-Bourbon Paste (recipe follows**)
8-12 # cooked, ready to eat Ham (bone-in Butt or Shank section)
1/2-1 cup Maple Syrup
Cherry and Apple Chunks

**Maple-Bourbon Paste:**
2 Tbls. pure Maple Syrup
2 Tbls. freshly ground Black Pepper
2 Tbls. Dijon or Honey-Dijon Mustard
1 Tbls. Bourbon
1 Tbls. Vegetable Oil
1 Tbls. Paprika
1 Tbls. Onion Powder
1 Tbs. coarse Salt, either Kosher or Sea Salt

Directions:
The day before smoking, place ham in an aluminum pan flat side down. Inject in multiple locations with maple syrup (use more than 1 cup if it will take it).
Smear the Maple-Bourbon Paste all over the exposed surfaces (except flat side). Cover loosely with plastic wrap and put in refrigerator until ready to smoke (I usually remove ham from the refrigerator about one hour before cooking).
Stabilize grill/smoker at about 250℉. Put 3 or 4 good size chunks of wood on coals and set up grill for indirect cooking. When smoke has stabilized, place aluminum pan with ham on grid. Cook until internal temperature reaches 140° (this should take about 5 hours).

    I agree with you, John! That recipe of yours is a proven success story that all novice and seasoned eggers should have in their recipe files!  It is GREAT! And speaking of GREAT - do have a Happy Thanksgiving!!!

    Definitely the way to cook a ham.  Always requested by the family.  Happy Thanksgiving.

    A good bit will leak out but if you are really aggressive with the injection you will get the flavour (nod).

    Does a spiral cut ham hold the injection, or does it leak out?
    Kinda like trying to put air into a blown out tire. Instead of injecting I have "buttered the slices" with the injection material and that seems to sort of work, but personally I get far better results with an unsliced ham, but to each his own.

    Made the Ham on Thursday and even though Ive made this a few times now I managed to burn the glaze... Also realized I had the grate on the PSWoo wrong the next day so that may have had to do with some of it.
