Hey All,
So have always done indirect traditional turkey cooks on my BGE. Recently, been only doing Spatchcock chickens and they come out amazing, so this year going to Spatchcock and looking for some general guidance.
24 Pound Spatchcock Turkey
Cook Temp will be 350* (Anticipated)
INDIRECT - BGE XL w/ Adjustable Rig
24hr Brine
24hr Rest in Fridge uncovered (dry out skin)

- Approx. cook time at above temp/indirect?
- How do you all handle the wings/legs for burning (cover w tin? tuck?)
- Any other advice?

A guide:
For the past 25 years cooking 1 or 2 spatchcock turkeys per year.I look for 10/11 lbs and cook direct raised @ 400 skin side up and never turn over.Cooks are approximately 90 minutes looking for temp (not time) breast @ 165 and thigh @ 175.
The above is from @Mickey in the turkey theory thread. A good starting point. If going indirect at a lower temp..... Maybe 4 hours?
If areas of your bird have reached the look you desire, covering or tenting with foil works.
Good luck. Share pics!
