It wasn't too bad yesterday as I was constantly moving with all the sides and didn't have much time to think. I just went out and lit the smoker a few minutes ago and it's not very enjoyable at the moment.

Second one of these in a week. Wife’s side of the family came today. Going to do one more tomorrow for leftovers , just bc the birds at food lion are $5 and already got the oil.

Was feeling ill on Wed and Thurs, so cooking my TG meal today. Got to use my new Typhur thermometer; as expected I couldn't get it to hook up to my Wifi (futzed with it a half hour the first day, then 45 minutes yesterday, no go). It does work as a standalone unit, was able to program the probes easily. The display gives me the req info but graphing/looking at each individual sensor requires the App, so I don't get that stuff.
After about twenty minutes, the breast was at 112º with 29 minutes to go (predicted) and thigh was at 160º with 11 minutes to go. On a turkey the struggle is to get the dark meat done before the breast overcooks, but this duck is threatening the opposite; odd.
Stuffing, smash potatoes, gravy, rolls and green beans rounded out the meal. Shrimp and Andoille Sausage gumbo with duck broth on the schedule for Tuesday!___________"When small men begin to cast big shadows, it means that the sun is about to set."

Trying to catch up with all of the stellar Thanksgiving eats posted here.Had our Thanksgiving gathering with our friends yesterday. A small group… Pops, my MIL, us, and one other family.
Turkey derrick a la Alton Brown
Mashed potatoes with parsnips and mascarpone, green bean casserole, turkey, Brussels sprouts, sausage and cornbread stuffing, veg stuffing.
Things got busy, and I missed taking some pics. Managed to grab a couple of the desserts... trifle for the kids, and jalebi.
Then today, what I've been waiting for... the Thanksgiving Leftovers Stack!! Waffled stuffing, mashed potatoes, gravy, GBC, runny egg, cran sauce, fried shallots. You need to save the above photo and post a couple days ahead of Thanksgiving 2025 (11/27/2025) so all are alerted as to how to enjoy.
BTW- I didn't know Franklin was into ladders these days as well.

@caliking Quite a banquet to round out this thread, some thoughts...
- I'm paying the price for growing up with jelebi and zero dental care
- That fence gate is not ocd friendly
- Nice Alton Brown contraption, never seen a propane hose that long, if you want to be extra cautious perhaps tie the pot handles to the ladder? OTOH I would have used the trees behind and save my money for Franklin brisket (nod @lousubcap)

Fresh, warm jalebis are such a treat. Hard to eat just one (or two), so I only eat them if I make them at home. Not that hard to make, and everyone enjoys them.
