Some great, and definitely authentic, ones on Rick Bayless' EweTube channel.  I've not made mole myself because, like some Cajun/Creole recipes, they're too complicated/voluminous when you're cooking for one.

For what it's worth and you probably already know that dizzy pig makes a mole seasoning. Maybe they have a recipe on their website!?
