Picked up this new to me cook book. Shipped straight from Canada. It is a bit dense and lacking in photos.

I would rather light a candle than curse your darkness.

Looks like an interesting book. 1914. Is touted as “reference” book, and not a cook book. One reviewer calls it a “dictionary of the kitchen”.Never again will you confuse your montmorency with a mirabeau.

It is pretty interesting, there is an entire section on eggs. Provides a basic how-to then roughly 6000 ways to do it different and what it is called.GrateEggspectations said:Looks like an interesting book. 1914. I kid. Love reading old recipes and cookbooks, and thumbing through the pages.
Little Steven shared Escoffier's "A Guide to Modern Cookery" (pdf) with me some time ago. I'd be happy to share it with you, if you're interested. Not as fun as having the actual book to read, though.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
It is basically Saulnier’s notes/quick references/a guide about « Le Guide Culinaire » by Auguste Escoffier; Saulnier was a student of Auguste Escoffier. If you want the details of an item then you need to read « Le Guide Culinaire ».fishlessman said:are these recipes family secrets or is this just a french thing to describe it and you figure it out from there
