Beef Country Style Ribs

These were new to me, seems they come from the Chuck section of the shoulder.  They were purchased from Aldi so may have come from some other primal.  And some chance they aren't even beef.
Indirect at 250ish with SPG from Dizzy Pig . . .
Flipped after about 45 min, then flipped again at 1.5 hour.  On 2nd flip had a man down due to chef error.  Here he is in peril and at front left after the rescue . . .
Probed good after about 2¼ hours . . .
Served with sauteed zucchini and potato salad . . .
They were good, but not as good as true ribs (beef or pork).  Way better than country style pork variety, by far.

    Therein is the key-"Way better than country style pork variety". A given across the spectrum.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
