Pork Steaks w/Field Modification

Had Mrs. Cooper buy the meat, instructed her to ask for a 2" cut and mentioned it would be around 2-2.5 lbs. Somehow that got translated to the butcher as two steaks about a pound each. Thickness was only about 3/4", only discovered this yesterday when I went to season them, still decided to carry on . . .
The mop sauce . . .
On the grill direct at 250' with some hickory chunks and SPG . . .
Due to shortened cook time I decided to flip and mop every 25 min or so, this is the first mop . . .
They were probing done after about an hour and 45 min . . .
Severed up with caprese tomatoes and spiced honey carrots. Steaks were really good flavor wise but on the dry side, likely because they were so thin . . .

Looks great! I love grilled pork steak.and don’t have it often enough. I season mine the same as pork butts. The meat ends up tasting like pulled pork, but with substance!
