dont know why you would cook a pizza with the dome open. i sear all the time with the dome open and wok with the dome open. the trick is to get to searing temps, open the dome and sear, if the flames start to get to big just shut the bottom vent to keep them at bay. with the wok you can shut the bottom vent when you get to the temp you want, 500/600 works pretty good for most things
