Whole Red Snapper 🐟

Been having a craving for whole red snapper, so I reached out to my guy Fred, my local fishmonger who just happened to be down at the docks in Boston and hooked me up with this beauty!

4+ lbs, I whipped up a little Caribbean marinade, scored the skin and left it to flavor overnight. Then I fired up the XL and got him on the fire. About 5-6 min per side, and the snapper was ready to pull. Some fresh pepper, mango, onion and cilantro salsa on top and dayum! I could easily become a pescatarian! (Don’t worry. Ain’t gonna happen!)
