2024 Mother's Day, 1.5-2-.3 Ham

Par nuked the thick bacon so as not to overcook the jumbo scallops.

Instead of the usual egret ham, I decided to try this recipe"

The XL worked perfectly for this cook, wouldn't have worked as well in the Traeger.
1) 250F: 1.5hr smoke with a small hickory chunk and handful of pecan chips
2) 300F: 2hr tented braise with one cup of chicken broth
3) 450-500F: Short blast to caramelise the glaze
Super happy with the result, just the right amount of smoke, glaze not dried up, moist meat and not too salty. Going forward this will be my go to for ham, also nice not having to mess with maple syrup injection.

@Stormbringer Just so you know, based on comments on the recipe, I modified step 1. Instead of smoking naked I applied some rub using a light coat of mustard as binder. Looking forward to see how it turns out for you.canuckland
