OT: Aloo Chicken

Saw this recipe pop up in the NYT app and decided to give it a try - very tasty, and highly recommend. 

Couldn’t find any Thai green chiles so I substituted jalapeños. 

Toasted the cumin seeds in ghee, then add the red onion, garlic and ginger (made into paste with a micrograter), and sweated then down:
Added the chicken and cooked till most of the liquid is reduced:
Spices, tomatoes, cashew butter, and stock in to the pool:
Added the potatoes and covered till tender:
Removed the cover and letting the liquid reduce a bit:

Served over rice and garnished with parsley, chopped cashews, and fresh lemon to squeeze over it all:

Only thing I’d change is either find Thai chiles or
use more jalapeños, or Serranos, etc. It just didn’t have much for heat. Every recipe we’ve tried from the app has been great.
