Whole hog, stick burner

My buddies and I have done a decent amount of cinder block pit hogs. My Sunday school teacher has been wanting me to do one for sometime for a fellowship meal, and it finally came together. 

Instead of moving 72 cinder blocks, a good buddy of mine was gracious enough to let me borrow his Lang 84. Let me tell you, this thing was a beast. Reverse flow. And the temperature control was single digit tuning. Ended up taking about two sticks of hickory every hour. 

There’s a lot of different ways to do this, and I think this was my 5th hog, first one to do solo without my normal compadres. We really prefer the flavor and experience of doing a 24 hour cook. Just turns into a whole weekend of great fun and fellowship. Some good quality man time. Truly, if you got good friends it will be the highlight of your year. 

We started Friday around 2 getting the fire lit and after running for an hour, we set for 225 give or take. Got the pig injected with apple cider vinegar, apple juice, butter and rub.  Rubbed him down and trimmed him up. Got the pig on around 330. Some minor adjustments due to wind. 

Fire pits, hot dogs and roasted twinkies all night. Played some card and guitar while drinking diet mountain dews. 

Had one buddy stay up the whole time with me and my other two feel asleep around 3 am till 6. Brought a black stone out to cook breakfast burritos on. A tradition we always have with the hog smokes. 

Ended up have about 40 come Friday night for hot dogs and kids road bikes around. Fed 100 or so Saturday night and plenty of leftovers. 

The last 2.5 hours of the cook we had the pig wrapped and added 100 brined chicken legs. 

Let the pig rest an hour, then pulled the meat at 430

    Epic weekend.  Great cook and camaraderie right there.  Thanks for the detailed post.

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
