Inspired by Little Steven's Upside Down Chicken

Decided to copy this on the 6th aniversary of his passing.

I usually apply potent spicy Walkerswood jerk marinade by weight, forgot to tare the scale...

Not a problem...

Cooked indirect in XL at 400 dome, added couple of cherry chunks for colour. Placed a plate under the stand to avoid fat soaked taters and onion. Pulled at leg IT 180, didn't bother checking breast temp.


Ate half, sending half away...

Chilling and skimming off the fat to harvest some sauce...

Full Disclosure: No offense to anyone. To each his own, said it many times before, after tasting chicken from pellet pooper it's very hard for us to go back to Egged chicken (tandoori is an exception). Had to clean burn the moldy XL and use it for this cook, to keep it authentic  :)

  • Never knew @Little Steven, but the little I do know about him tells me that he would appreciate the cook and recognition. Plus, he was Canadian, so he had to be cool. 😎 Pretty neat that you broke out the XL and even clean burned it for the cook. 

    Now do the one with the satay one where the chicken nearly spoils in the luggage - the authentic way. 

    (Btw, I am surprised you bypassed breast temp verification. If it was me, I wouldn’t have been able to resist checking, if only out of curiosity!)
  • Also, you have a lot of kitchen gadgets! You either have a big room expressly dedicated to this pursuit, a tolerant wife, or both!!

    @GrateEggspectations Without a doubt, Steven was one of the coolest fellas on the forums (old and new). Another good Canadian who died young was Shane @Mr Holloway, miss them both. Didn't want to stab the breast and lose the juice  ;) The chamber sealer and the vintage commercial scale are our most used gadgets, they sit on a dedicated steel cart, not in the kitchen.
