In the very same spirit of your post then for YEARS I used to “beat myself up“ when my brisket didn’t hold up to my self imposed expectations! And the worst was when we had company! And even worst yet was with pleasant company which probably didn’t know brisket from hamburger!My advice is to learn how to keep your dissatisfaction to yourself and keep on honing your egging skills!Re-gasketing the USA one yard at a time
