225 deg dome temp for about 3 hours or until IT reaches 130 deg f. Crank up heat at the end, drizzle with honey and cook for about 10 to 15 minutes longer. Rest for 30 minutes.

Love lamb and that is looking great. I am a big fan of 55*C for the finish, aka 130*F.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Our kids like lamb that we’ve had at a Brazilian steakhouse but SWMBO is not a fan.XL BGE

Finished and resting. @Ragingirishman2 , try cooking a product from Australia or New Zealand. Publix is good about carrying them. The USA lamb you get from steakhouses around here can be very gamey tasting at times. It might change her mind if you cook it yourself from a different source.
