Roasted pork belly with Brussels sprouts and smashed potatoes

Wanted a fun dinner last night, so scoured the fridge and freezer and threw this together for the two of us. We’ve been hitting repeat with the smashed potatoes - partly because we’ve had the little potatoes on hand and partly because they’re addictive. 

Again, my photos leave a lot to be desired.

That's a good looking meal, even the sprouts look nice, and nice use of that square CI again. What's your setup in the large Egg, is that a PSWoo?

Thanks. Yes, that pan sees a lot of action. I prefer using it on the MM though - just because it fits so perfectly. Also used for the belly but not pictured was a traditional lodge 12”. The setup is the Smokeware Grate Stacker. https://smokeware.com/products/stacker-and-16-grill-grate-combo
