Roasted pork belly with Brussels sprouts and smashed potatoes

Wanted a fun dinner last night, so scoured the fridge and freezer and threw this together for the two of us. We’ve been hitting repeat with the smashed potatoes - partly because we’ve had the little potatoes on hand and partly because they’re addictive.
Again, my photos leave a lot to be desired.
