I would like to smoke a brisket on Sunday, freeze it, then serve it the following Sunday. Has anybody done this, any tips? Thank you.

Have not done it but many of the established Q places in Texas will ship a smoked frozen brisket with instructions on how to thaw and reheat. I'm pretty sure Franklin, Snow's, Terry Black's and Louie Mueller ship. Give their websites a look for the instructions. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I haven't but I know with Franklin's they say the best way to reheat their brisket that ships is with a sous vide."The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan
