Roasted Chicken Stew (feat. buttermilk roasted chicken and homemade broth)

Was making Samin Nosrat’s buttermilk roasted chicken for guests this past weekend and made extra to be used for a stew. Did all additional prep work for this recipe on Monday, including the making a homemade broth and the parsing out of the various ingredients for different stages of the cook - an approach I love (give it a try if you never have). Given the prep, this made for a really easy and extremely satisfying weeknight cook this evening when we would not have had the time otherwise.
(Edit: I should add that I chose this recipe because it made use of an abundance of ingredients that had hit their peak. I like minimizing food waste where possible.)
