    First @Stormbringer and the duck legs, now these.  They look great!
    Pretty sure there are some poultry legs in my near future.  :)

    @Dyal_SC - the level of effort to prep those is extremely demanding.  Your kids are eating treats they will never find in an adult restaurant down-stream.  What a treat.

    @lousubcap , really not that bad. Took about 5 or 10 minutes.  Knife and a paper towel or 2 to snap the cartilage back over the top. Couple of scrapes and cuts with the blade to help loosen it up.  Wouldn’t want to do them to cater an event or anything, but don’t mind prepping a dozen or 2. :)
