2023 Boxing Day

Did our family only thing yesterday, not by plan but due to conflicts and post 12/23 rest needed 
Leg roulades were SV then CI pan seared. Managed without Activa RM as usual ... rolled tight with cling film, semi-frozen before vacuum sealing, tied with butcher strings before searing to avoid the 'joint' from opening.
Breast was brine injected, salted under skin and air dried overnight, cooked low and slow, finished in screaming 550F kitchen box.
Both came out very moist. Gravy from bones+neck stock plus pan drippings did justice to the bird. Couldn't find any fresh or frozen cranberries but the Ocean Spray canned stuff was a pleasant surprise, may be our go to in the future.

@GrateEggspectations Thanks, this is our go to Brussels sprouts recipe, easy and real good. We pre nuke the sprouts and cut down the maple syrup from three to one TB...

Yes, this is the first Christmas for #3 and #4 grandkids. The youngest has trouble finding a newborn hat, thankfully the knitter in the family cranked one out for her in no time on short notice!

Forgot to post the last dish that was arguably more popular than the turkey, a big Biscoff cheesecake made by our daughter. Apparently it's a new social media thing similar to butterflied chicken drums.

Over the top but just the norm for @Canugghead. Congrats on grands 3 and 4.About that cheesecake. That is a home run right there. Quite the enticing photo-screen licking category!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

@caliking Thank you kindly. Funny you should say that, at this stage the older ones are still too young to say that, but that's what we tell each kiddo before they have teeth, minus the NO IDEA part. May be it's a cultural thing
