Smoked Wagyu Beef Tallow

Greetings friends!

I smoked a tiny brisket for a friend, and decided there was enough room to put a tub of wagyu tallow in for a smoke.  

I’ve never used tallow. I get the concept. Figured it was time to smoke some up and jar it off for use later. 

I’ll probably put one jar on the shelf, one in the fridge, and the rest in deep freeze.

    I use it as it keeps for well better than a year if in the fridge.  Almost like a secret sauce.
    BTW- how was the baby brisket?

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
