Dry aging start again...

Morning All:

With Publix having their sale on standing rib roasts again (this year it is $6.99/lb instead of $5.99 like last year), I decided to do two roasts...a smaller one (4.7# without the bones) for New Year's eve/day (not sure yet) & the larger one (7.89 without the bones) for Valentine's Day...That will give about 22 days for the small one & 60+ days for the large one...here they are ready to go into the fridge...


I didn't get the cheesecloth for the large one until today so it is now wrapped & soaked with Amaretto & ready to go back into the fridge...


Looking forward to what will be some DELICIOUS steaks!!!
